Day 316: Carrot Apple Ginger Tea Cakes from PULP!

As you all know, I have a juicer and I love to juice all kinds of fruits and veggies! Well I had heard that you could actually use the leftover pulp from juicing to make various baked goods! I had never done it before, but after making my roommate and I some fresh juice with carrot, apple and ginger in it, I looked around on the web for a bit and found a recipe that had exactly those ingredients in it! I didn’t have dark chocolate chips so I left them out, but I thought they were amazing anyways.

A note about baking with pulp… PLAN AHEAD BEFORE JUICING!! I didn’t think about doing this until after I had juiced, so I didn’t peel the the fruit and veggies like I should have or cut out the apple cores, so I had to pick through the pulp and pull out the bad stuff before baking… so next time I’ll plan ahead and definitely take the bad stuff out! Anyways, here’s my nicely packed and seed and skin free pulp!

I mixed all the ingredients together and the batter tasted AMAZING! Then I spooned it into the muffin tin and baked away! Here’s the finished product!

The were definitely more dense and moist than your average cake/muffin because of using the pulp, but they were so, so, so, so tasty! I brought them to work and they were a hit! Unfortunately I forgot to take a picture of them outside the pan, but oh well! I think I will definitely be experimenting with pulp recipes again!

Day 274: Fresh Juice

For my birthday this year my sister gave me money to get a juicer! Juicing is something she’s really gotten into lately and she even did a 10 cleanse where she juiced for every meal! Drinking fresh fruit and vegetables is a really great way to be more healthy and something I’ve been wanting to try for awhile, so I decided that for lent this year I was going to juice for at least one meal every day! I’m starting a day late because I have strep throat and felt to bad to do anything yesterday, but better late than never! I probably won’t post every juice I make as a daily creative project, but I was so excited about this first attempt at juicing that I had to post it!

The juice I made today contained:

1 small Fiji apple
2 small oranges
2 handfuls of baby carrots (had them from awhile back)
1/2 mango
1/3 cucumber
1″ section fresh ginger root

I took a picture straight from the juicer and then one after stirring it up because you can really tell that the cucumber was one of the last things I put it!

I have to tell you, this was pretty awesome! Next time I may use less orange, more apple because it was a little citrusy, but it was tasty! I’ll also probably lay off the ginger for a few days because I LOVE it, but it hurt my throat sooooo bad!

Juicing is a pretty major undertaking in that it takes awhile to prep everything and then the clean up is hard, but it tastes soooo good! And I know for sure I don’t get the fruits and vegetables I need every day, so I could see this making me feel better over time!
