Day 223(16 days late): Turkey Loaf Muffins Take 2

Today I set out to make the turkey meatloaf muffins that I made a while back again. I quickly realized that I was missing a few of the ingredients! I was missing onion, so I replaced that with edamame, because that is what I had on hand! I added in some dried chopped onion to try and give it some of that onion flavor. Instead of green bell peppers, I used a yellow one, and I was running low on garlic as well, so I supplemented with some dried garlic. I sauteed all of that together!

Next I mixed all of the ingredients together, but remembered that I didn’t have any eggs! So I added extra ketchup to make it stick together. Here is the mixture in the pans before baking.

After baking for a while, I added the ketchup mustard and brown sugar mixture to the tops and finished baking!

I ate 2 for dinner because I hadn’t eaten all day, and man was it good!! The edamame added an extra layer of texture that was nice, although I think the lack of egg made it a little dry. But overall, not bad! I will be eating these for a few days now!

Day 194(10 days late): Turkey Meatloaf Muffins

I found two different recipes for meatloaf made with ground turkey on Weight Watchers that looked good, so I combined the two. I mostly stuck with the first recipe, but put the mix in muffin pans instead of a loaf because I liked the idea of having it pre-portioned. I won’t post the whole recipe here since it isn’t mine to post, but here are a couple of pics from the process.

The rest of the ingredients before mixing, besides meat. It called for salt, but apparently we were out of it, so I used soy sauce instead!

Here they are after baking for 30 minutes and then topping with a ketchup, mustard, brown sugar mixture, and baking 5 more minutes. I filled the pan a little too full because I didn’t want to make two batches (only one pan!) and therefore they overflowed a bit when baking…

DONE!!! Getting ready to dig in!

I ate this with a sweet potato (microwaved cause it is easier…) sprinkled with cinnamon and stevia! Overall it came out super yummy!! I love that I have leftovers that are already portioned out that I can take to work! And, since I used ground turkey breast, it is a much healthier alternative! I will definitely be making this again!
